The story of Fumets Sylvestre

Success stories are often the result of a consuming passion that started with a childhood experience.

This is exactly what happened to me. My name is Guy Poulin, the founder of Fumets Sylvestre. In 1991, my father Jean-Guy decided to start a fish farm where he would raise speckled and rainbow trout.

This in itself wasn’t so unusual – except that he set up the fish farm in his home basement! Just imagine two huge tanks filled with circulating fresh spring water, holding 6 000 live trout - in the house. Now that’s unusual.

Fishing fanatics could indulge in their favourite pastime in the dead of winter. They came to my dad’s house to catch fresh fish, and even cooked it on the spot. My eccentric father taught me to do things differently. Seeing him live with thousands of trout under his roof gave me a passion for fresh food and gave me the idea of offering a high-end product to whoever wanted it.

Fish smoking is a centuries-old art. I spent hours learning its secrets. For years, I had been using a small portable smoking kiln that allowed me to enjoy my catch by the riverside; however, my plan required sophisticated technology and gourmet recipes. First, I engaged in exhaustive research and read everything I could about my future career. Then I consulted experts at the Canadian Food Inspection Agency (CFIA) and the Quebec department of Agriculture, Fisheries, and Food (MAPAQ).

It was in one of MAPAQ’s laboratory smoke-rooms in Gaspé that I first experimented with smoking for commercial purposes. I soon learned the difference between expertise acquired in the wilds and safe food production, but it did not weaken my passion for smoked products. Over a period of 5 weeks with a 4-person team, I completed my training and created scores of recipes for smoking the most delicate fish. Although I wanted to create six products, there was so much work involved in developing a single recipe that I started with three products only: cold-smoked trout lightly seasoned with orange and anise; cold-smoked salmon with maple syrup and armagnac; and a sublime hot-smoked salmon with pepper. I am extremely fond of these fish and they keep my passion for fishing alive.

In 1998, having mastered the art of hot and cold smoking fish of the salmon family, I founded Fumets Sylvestre after more than three years of research, development, and improvement. Having invested so much in the company, I wanted it to expand. I therefore began to develop foreign markets and did everything necessary to meet the industry’s highest standards. I remembered my father’s enthusiasm and how he strived to do things differently. I wanted to offer more than smoked fish. We experimented with new recipes for game, duck, lamb, and deer. With the help of an expert chef panel and a group of discriminating tasters, we slowly but surely developed first-quality, perfectly smoked products. Today an increasing number of restaurateurs and consumers are using our products.
